Our Story

From one borrowed roaster to Portland's morning ritual

Ember & Oak began in 2016 with a secondhand 2 kg drum roaster in a garage on SE Alder Street and a stubborn idea: coffee tastes best when the people who roast it know the people who grew it.

Today we roast on a 12 kg Loring, visit our partner farms every harvest, and still cup every single batch before it ships. The garage is gone — the stubbornness stayed.

  1. 1 Rinse the filter and preheat your dripper with hot water.
  2. 2 Add 22 g of coffee, pour 60 g of water to bloom for 45 seconds.
  3. 3 Pour slowly in circles to 350 g total water; aim to finish by 3:30.

  2. 2 Pour 450 g of 200°F water and steep for 4 minutes.
  3. 3 Skim the crust, press slowly, and decant immediately.

  2. 2 Pull a 36 g shot in 28–32 seconds at 9 bars.
